Burgushi: Cowfish's Creative Menu

If you like burgers and you like sushi, try Burgushi. This What’s Shakin’ Tuna Bacon Sandwich features sushi riced filled “buns” around ahi tuna, bacon, lettuce, and slaw, served with a side of sweet potato fries.

It’s anything but traditional, but in this sushi- and burger-obsessed city, Marcus Hall’s new Cowfish Sushi and Burger Bar in SouthPark actually makes sense. Cheeseburger fanatics can chow down on one of the sixteen specialty burgers, served with sides like fried pickles, while sushi lovers have more than sixty rolls to choose from—plus endless “build your own” options. But where Hall, also the owner of eeZ Fusion & Sushi in Birkdale, gets really creative is with the amusingly named Burgushi. A fusion of burgers and sushi, the Burgushi section of the menu offers ten variations that use burger and sushi components (don’t worry, no raw beef is involved). Here you’ll find items like the decadent Doug’s Filet Roll ($14), a Philly roll topped with slices of seared filet mignon and spicy sauce, as well as the tasty What’s Shakin’ Tuna Bacon Sandwich ($12), featuring seared ahi tuna, bacon, lettuce, and slaw, all stacked between two grilled spring roll wrapper “buns” filled with sushi rice. It’s unusual, but the combination of unexpected flavors and textures is actually quite good. Still not convinced the fusion route is for you? Try one of the Cowfish Bento Box combos, which come with burgers and sushi, as well as fries and edamame. It’s the gateway dish to Burgushi, and chances are you’ll be hooked.
