PrintSweet Ride: A Cupcake Food Truck

It’s hard to miss Emma Merisier on Charlotte’s roads. She’s the one driving the bright-pink truck—and selling cupcakes from the side. After years of baking for friends, Merisier began her home bakery, Southern Cake Queen, in 2008. This year she decided to do something to set her apart: create a mobile bakery. Her colorful truck, which she drives to events and locations around town, is filled with cupcakes in classic flavors like vanilla and red velvet, as well as creative options like lemon drop. “My favorite is our signature strawberry cupcake, which is full of pureed fresh strawberries,” says Merisier. “A customer told me it tastes like a bowl full of fresh strawberries.” Got a craving for something sweet?
