Chop’t, a restaurant that serves custom salads with local twists, is expected to open its first Charlotte location around Labor Day. The Park Road Shopping Center location will be the first Chop’t outside of New York City and Washington, D.C., where there are currently about 30 restaurants. The company hopes to open five or six in our area, according to Chop’t CEO Nick Marsh, while also considering expansion in other cities. Charlotte was a good fit, Marsh says, because of an appreciation for local, quality foods and bold flavors. Chop’t salads change seasonally.

“One of the things we talk about is our mission, to change the future of fast food. What that means to us is that you can have homemade dressings with no preservatives, you can have great flavors and quality ingredients and local ingredients and an environmentally thoughtful restaurant, and you can still have it at a pace that fits into the speed we’re all living our lives,” Marsh says. “And we think that Charlotte is a great market to bring that to.”
