Futo Buta to open May 1 in South End
Chef Michael Shortino plans for first restaurant
Chef Michael Shortino will open his first restaurant, Futo Buta, in South End on May 1. The Japanese-inspired menu will include dishes such as ramen, steamed buns, Japanese fried chicken, and sushi. Shortino most recently served as executive chef at Baku in SouthPark.
Futo Buta, a play on words that roughly translates to "fat pig," will be located at 222 E. Bland St. and will seat 40 people inside. When weather allows, there will be an additional 40 patio seats overlooking the light rail. The restaurant will serve lunch and dinner. According to a press release, low country pork belly steamed buns, rich tsukenen ramen noodles, and house-made white kimchi will be among the signature dishes. The beverage menu will include a sake collection, as well as local craft beers. Shortino also plans to source the menu locally.
Hours for the new restaurant will be Sunday through Thursday, 11 a.m. to 10 p.m.; Friday and Saturday, 11 a.m. til late.
