The Story Behind Pinky’s White Trash Burger


IN THE EARLY 2000S, when the Penguin Drive-In was still open, Greg Auten had a problem in his kitchen: Every day, he threw out tons of uneaten fried pickles and onion rings. After leaving the Penguin in 2010, he opened Pinky’s Westside Grill and began looking for creative ways to cut out any excess. “When I was putting together the menu … I kept thinking, ‘What a waste,’” Auten says. So he added fried pickles and onion rings on a burger patty, along with some spicy ranch and provolone cheese, and created what is now Pinky’s best-selling sandwich: the White Trash Burger ($5.75).
