It hits your sweet, spicy, savory, and fatty taste receptors. You can get it raw or deep-fried, dip it in spicy mayo, or douse it in soy sauce. It requires big, uncivilized bites. It’s photogenic. And the chefs who prepare it are true artists. If you claim to dislike sushi, there’s just one reasonable explanation: You haven’t had good sushi yet.

Charlotte is home to a variety of top-notch sushi bars. Arrange your chopsticks, ginger, wasabi, and soy sauce, and roll on.

Prime Fish

11212 Providence Rd. West, Ste. B

You won’t find deep-fried sushi rolls doused with sauce at this Ballantyne restaurant. Ninety percent of the menu is raw, and about 95% is seafood-based. Chef Robin Anthony makes Edomae-style sushi, which is what you’d eat in Tokyo. He’s also a certified sake adviser who pairs the Japanese rice drink with fish the same way a sommelier pairs food with wine.

Come for the view, stay for the food. You can’t go wrong with any of the house sushi rolls, but the namesake roll topped with seared wagyu and shaved truffle is hard to forget.
