Crock Pot Love

Don't leave your house this weekend

I assume you're all feeling a bit better slash recovered after the revelry on New Year's? Perfect. Since today and this weekend promise to be bitterly cold (for you southerners, anyway), I felt the need to share a few quick and easy crock pot recipes. If you don't have a crock pot, please splurge and spend the $20 (yes, that's it) and buy one. They are a life-saver. 

To me, there are two kinds of crock pot recipes; the kind where you dump all of the ingredients in and walk away, and the ones where you need to brown meat, cook some veggies, and THEN combine it all. Obviously, I prefer the one with the least amount of work, but either is delicious. 

Gramma's Pot Roast (I shouldn't be sharing this, but I will)

  • 3-4 lb beef pot roast
  • salt and pepper to taste
  • 3/4 oz package brown gravy mix
  • 1/4 cup ketchup
  • 2 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 1/8 tsp garlic powder
  • 1 cup water or beef broth

Sprinkle the meat with salt and pepper and place in the crock pot. In a bowl, combine remaining ingredients and pour over meat. Cover and cook on low 8-10 hrs or on high 4-5 hrs. Serve over buttered egg noodles.
 

Jambalaya: This is a one-stepper, and it's AWESOME. Plus, you don't have to make any sort of roux but it still kinda sorta tastes like a gumbo. Awesome cheat, great success. 

Tomato Soup: This is a two/three stepper, but it's healthy and delicious. Plus, it's vegetarian friendly or, at least, it can be. 

Chili: Lots of steps; definitely worth it. It's necessarily DIFFICULT, it just is a bit time consuming. The payoff is worth it.
