Orrman's Cheese Shop Expanding Space and Menu
New bar space will open in late spring or early summer

Orrman’s Cheese Shop is expanding. The 7th Street Public Market vendor is taking over the vacant bar area to its right, where guests will so be able to enjoy cheese plates and an expanded menu by early summer.
Owner Rachel Klebaur says the beloved (and BOB-award winning) grilled cheeses will remain, but other cheese-focused dishes will be on the menu, too—including macaroni-and-cheese and niçoise salad. There will also be some tapas-style dishes that use the tin seafood lines already sold in the store. In the kitchen is Klebaur’s husband, Jose Espinosa, who came on last year. Orrman’s is looking to hire several new employees to manage the new shop, as well.
The retail options will expand to include charcuterie, sliced and ordered by the pound to take home and enjoy with your cheeses. Providers will include Smoking Goose, Olympia Provisions, and Red Table Meats.
"It's kind of like how we select our cheese,” Klebaur says of selecting the charcuterie they’ll sell. “If it's well-made and delicious, then you can usually find it at our counter."
Guests can get a glass of wine or beer at one of the market’s other vendors to enjoy with their cheese. There will also likely be recommended wine pairings from Assorted Table Wine Shoppe for the cheese plates.
Klebaur has 15 years of cheese experience, beginning in New York City, where she worked behind the counter at famed cheese store Murray’s. She later took a job as a buyer for a retail company, but missed the customer interactions that came with working at the counter.
“I love cheese, but it doesn't interact with you all the time, so it's great to be behind the counter working with customers again, talking to actual people,” she says.
The cheese shop also quietly rolled out breakfast on the weekends earlier this month, serving morning eats such as caramelized brioche with cardamom cream and steel cut oats with honey, mascarpone, and berries.
“We like to roll things out slowly,” Klebaur says.
